This simple yet delicious loaf is from Mr. Leonti’s Brooklyn Bread Lab, and relies upon an overnight rest and fresh yeast to ensure the development of the sour, tangy flavor and chewy texture of sourdough bread without having to mess with “starter.” It’s a great bread, but you do have to plan ahead at least one day!
